We start with a history of Ethiopian coffee and how it spread across the world, Ethiopian varietals and an explanation of the chemistry of coffee beans and then we do a hands-on roasting class where we roast a number of different beans a number of different ways and then we cup the results. We usually finish with a Jebina - a traditional Ethiopian coffee and the best way to drink coffee. This is a class aimed squarely at nerds!

I am a coffee industry professional and took this course to further my experience as a coffee roaster. The class opens with a presentation on coffee, Bu'na as a coffee company and coffee roasting in general, moves to a hands-on jebena and traditional hand-roasting experience and then finishes with lunch and a bag of coffee to go. A great value! I loved the hands-on portions of the class and the scientific storytelling approach Chris has, while retaining and actively supporting the cultural/societal methodology of traditional Ethiopian coffee. Understanding where coffee comes from and the labor involved in it is essential in the coffee industry in striving for ethical consumption, so I think the historical context presentation showcasing the women behind Bu'na is important to the class. But, I really encourage people taking the class to ask questions and be upfront with Chris about what they're hoping to get out of the course! He is incredibly receptive and very easily meshes the class to what kind of experience you are looking for. I am interested in, and therefore we talked at great length about: ethical sourcing, shared trade and coffee industry standards. I got to roast coffee by own hand to my flavor standards for espresso based beverages, as my preference, and then make some fun latte art for us to share with some delicious food. (Thanks for letting me hope on the espresso machine!!) Chris provided awesome insight into some basics about coffee and also went further and beyond into exothermic reaction times, espresso grinding and tamping mechanics, etc all catered towards me as a professional. So take this class, speak up, and let Chris help you realize some incredible things about your favorite roasted drink!

The class was a lot of talking and a computer presentation and then a very quick Roasting session. The class was about roasting and cupping coffee. A quick history lesson of coffee would have been enough but we literally spent over 2 hours on a presentation speaking and didn’t get to roast much coffee. Also the take-away bags were only one per couple but if only 1 person had booked they would have received the same bag so really we should have received 2 take-away bags since we paid for two sessions. Overall I found the roasting itself interesting but yay really was only 20 minutes and the rest of the class was not interesting when we consider that it was a coffee roasting class. For this reason we felt it was way overpriced.

Very excellent experience. I would highly recommend to anyone in Toronto for any reason, as long as you enjoy coffee of course. Amazing experience! Highly recommend. The atmosphere, plus the knowledge you walk away with, makes you feel tapped into an ancient tradition. Especially enjoyed hearing about the history of coffee. Very cool class; very glad I made time to do it!
