Enjoy one-on-one tuition with your own personal chef and tutor, Ian Fisk, learning how to prepare and create authentic regional French dishes from locally sourced ingredients.
Chef, Ian, owner and resident chef of Le Chèvrefeuille right in the heart of the Périgord Noir welcomes you to CookDordogne’s One Day Regional Cookery Course.

This unique one-day cookery course kicks off with participants meeting each other over coffee in the beautiful salon at Le Chevrefuille. Then, the real food-fun begins with a visit led by chef Ian to a traditional Perigordian farmers market (either the market at Le Bugue or St Cyprien market ).

After the market tour it’s straight into the kitchen at Le Chevrefeuille where you will experience a fun, hands-on day of preparing, cooking and tasting famous regional dishes such as confit of duck, cabecou, tapenade, regional veloutes, cepes, foie gras and oysters. The dishes change according to the season to make the most of locally grown, seasonal produce at its best.

The course finishes between 4 and 5pm.. All participants receive a copy of recipes cooked on the course.

Ian trained as a chef in 1988 at Le Talbooth restaurant in Essex, England. His passion and curiosity for food was one of the deciding factors in moving the family to the Dordogne. Since 2004 Ian has been the resident chef and owner at Le Chèvrefeuille, showcasing local dishes from local produce. The dream of running a cookery school quietly lurked in the background.

One of Ian’s greatest pleasures is introducing others who have a love of food, fresh produce, and an interest in cooking using traditional cooking methods, to the local markets for which the region, and all of France, is renowned.

Thoroughly enjoyed meeting Ian and sharing a bit of the paradise he’s built. Beautiful property and lovely outdoor space for a cooking class. Picked up a few tidbits and had a very enjoyable day.

Ian (and his wife Sara) could not have been any better. Ian style puts you instantly at ease but in the other hand you are in awe of his skills and expertise. A wonderful, wonderful experience. From start to finish, this was a wonderful experience! Chef Ian taught us a lot about the Périgord Noir (the local area) and its products as we walked through the market in the morning, then gave us time to make our own purchases outside of what he was picking up for our meal. His friendly manner and sense of humor throughout the day made it feel more like entertainment than like work or education, even though all were included - and the "work" of preparing the food was shared among 4 people per work station, with no one being pressured to do anything they weren't comfortable with. All 3 courses we prepared represented local specialties, and everything was delicious! The way Ian paced the day, interspersing prep time with eating one course at a time, worked out very well. Since the Périgord is known for its cuisine, this is a perfect way to spend a day in the region! I highly recommend this experience!

A fun day learning new things. The other participants came from close to where I live in Australia so we became friends which added to the experience. Ian and Sarah are a great team - everything flowed well. We certainly felt welcome and enjoyed making and eating the food. Strongly recommend- I left feeling inspired and uplifted.

We had an amazing day at Ian's culinary school. It was one of the highlights of our trip. Ian was extremely friendly, personable and knowledgeable. We enjoyed finding out about the local produce and Ian adapted our menu to suit the very hot day. The food was exquisite and the session was well paced and explained. Ian sent us the menu so we could carry this out again at home. There were so many special touches. Would love to come back.
