Two expert instructors are our guides. Tim shows us, hands-on, how to hoist, skin and butcher two deer & explains how to prep antlers & skins - and uses for sinews, bones and fats. You will learn why deer are culled and their life cycles - all within their natural habitat. You will learn all the joints and cuts too.
Then Chris for primitive tech, foraging and cooking. And storm kettle tea!
Other things to note
A hands-on experience for those who want to get closer to wild game and to understand all about it. You will be guided through knife use. We will keep you well-fed and watered!

We'll be one hour from London, in ancient woodland w/river - all within the South Downs National Park. We'll start in the Walled Garden Workshop and then have a nature walk by the chalk stream river, then up to the yurt site for a campfire and feast of what we've prepared throughout the day.

By the end of the day, you'll almost be able to open your own butcher shop! Overall a really fun day, everyone has something to do, and the food is very high quality. You'll learn how to skin a deer, and then take it all the way through to a prepped meal, learning about all the different cuts of meat along the way, as well as having a go at butchering pigeon if you wish. Alison is a great host and it's a very friendly environment. 10/10 birthday gift and experience.

It was hard to know what to expect - but for the uninitiated in the ways of butchery, (which I would assume you are when coming on this event), this starts with a deer carcass which was shot about 7 days prior.
There is the chance to get your hands dirty, but it's the kind of thing I would opt to see done once before attempting, so was quite happy to let the pro do this, although I did get my hands dirty with a dozen or so wood pigeons that need de-breasting. If you have a hunting/bush knife for the task, then definitely pack it.
Once everything was prepared, fires and a firepits were lit, and cooking began out in the field kitchen by the yurts.
It was very informal, and enjoyed what turned out to be a feast in the woods with some friends and other paying guests present.
I absolutely was made to feel welcome and the experience was all very positive, informative and above all tasty !
This would be fantastic as a more civilised thing to do on a hen/stag party, or with a larger group of friends.

Fascinating day from start to finish in beautiful woodland setting. Alison and Guy - charming and lovely - greeted us with good coffee and a chilled venison consommé. Personally went for coffee but nice touch. Deer duly expertly skinned and butchered before our very eyes then prepared for cooking over open fires and buried in underground fire pits. Also shown how to prepare pigeon, shot that morning and these added to our lunch menu. Jolly and delicious lunch under the trees and an opportunity to chat to instructors about all things outdoors. Learned a lot and would thoroughly recommend.
