At 2017's Canadian Cheese Grand Prix, Handeck cheese took home the title for best Farmhouse Cheese in all of Canada. Handeck cheese is an 18 month old Swiss Alpine style cheese that cheese maker Shep Ysselstein is making very similar to the cheeses he made while learning how to make cheese in Switzerland. The team at Gunn's Hill couldn't be more excited for this award, which also credits the Ysselstein family farm, Friesvale Farms, for the incredible milk they are producing from their herd. Adam van Bergeijk and his wife Hannie took over the family dairy farm in Holland from Adam's parents in 1976. From the beginning, they had an interest in making artisan cheese on the farm. In 1981, they both attended the renowned cheesemaker's school in Gouda, a centre of cheesemaking expertise for over three hundred years. Now a teacher of cheesemaking himself, Adam has trained students from countries throughout Europe in the art of cheesemaking.
